Healthy Eating – Lemon Parmesan Garlic Chicken and Veggies

I am sharing a recipe I just made and a must try for everyone who wants to eat healthy food. My husband doesnโ€™t like veggies at all, so I always have to think of varieties when it comes to making veggies for dinner. So I found this recipe on the internet and thought to make it my way. And yes, it turned out delicious ๐Ÿ˜

Lemon Parmesan Garlic Chicken and Veggies

Instead of baking, I grilled it on a grill pan and served it with mix veggies. Tastes great!

Sharing the actual recipe and you can make changes as per your requirements.

Recipe:

Ingredients:

For The Chicken:
1 large egg
2 tablespoons lemon juice (or juice of 1/2 a lemon)
2 teaspoons minced garlic
1/2 tablespoon fresh chopped parsley
1/2 teaspoon each salt and pepper , to season
1/2 cup breadcrumbs
1/3 cup fresh grated parmesan cheese
4 skinless , boneless chicken breasts (or thighs)

For The Veggies:
Mixed Veggies – Broccoli, carrots, green beans and corn
1/2 cup butter , melted
2 teaspoons minced garlic
salt to taste

Instructions:

  • In a large bowl, whisk together the egg, lemon juice, 2 teaspoons garlic, parsley, salt and pepper.
  • Dip chicken into egg mixture, cover and allow to marinade in the refrigerator for 30 minutes to an hour.
  • In another bowl, combine the breadcrumbs with the parmesan cheese.
  • Dredge the egg coated chicken in the breadcrumb/parmesan mixture, lightly pressing to evenly coat.
  • Place chicken onto the baking sheet / tray and lightly spray with cooking oil spray.
  • Bake in preheated oven for 15 minutes at 150 degrees.
  • If you’re using a grill pan, you can add a tablespoon of butter and add the chicken fillet. Grill 3-4 minutes per side until it looks crispy and nice. Note: Over cooking a fillet will drain its juices and will make it dry.
  • Stir fry vegetables. I took broccoli, carrots, green beans and corn. Add one table spoon butter on a grill pan and add the veggies. Stir fry on a high flame or else they will become soggy. Add some salt, black pepper and lemon juice, and serve immediately.
